Chicken Pulao(one pot Chicken pulao)


For Marination :

Chicken -2.2 lbs (1 kg)

Ginger-Garlic paste- 1tbsp

Coriander powder-1tsp

Cumin powder-1 tsp

Garam masala -1tsp

Chilli powder -1 tbsp

Turmeric powder -1/4tsp

Salt-as per taste

Fried Onions- 2 tbsp


Lemon juice-3tbsp

Cilantro leaves- handful

Mint- 1cup

Mix all the above ingredients and marinate preferably overnight or at least for 6 hours.If you wish you can add 1/2 a cup of yoghurt to marinate.(I added it while cooking).

For Rice prep :

1) 3 cups of Basmati rice which is throughly washed and soaked at least for half an hour.

2) 5 cups of water

Ingredients :

Ghee( clarified butter) -2tbsp

Dhagad phool-3 tbsp

Cumin seeds-1/4 tsp

Shahi-jeera-  1/4 tsp



Cinnamon sticks- 1 inch  stick ( broken into 2-3)

Yoghurt -1/2 cup

Salt-as per taste

Fried Onions- 1/4 cup

Fried cashews-3-4 tbsp (for topping)


Take a thick bottom pan on a medium flame add ghee, spices, once the  spices fry in the ghee.

Add the marinated Chicken let it fry for 5 minutes add  fried onions, yoghurt and mix the yoghurt properly, close the lid and let it cook for 15 -20minutes, and add 5 cups of water, salt and let the water come to a boil.

Add soaked rice (make sure there is no water left in the rice), close the lid and increase the flame to high for 5 minutes, and reduce it medium for 20 minutes and simmer it in the last 5-6 minutes.

Once it is done, rest it for 5-10 minutes.


You can add yoghurt to the marination instead of adding it to the pan directly.

You can omit chilli powder and can add green chilli paste with cilantro and mint, that gives a good green color to the rice.

Once the rice is perfectly cooked each grain should be separated for the perfect pulao instead of mushy.
