Green chicken pulao (one-pot recipe)

Ingredients :

For Marination

Chicken -2.2 lbs (1kilo)

Yoghurt -1 cup

Garam masala powder-1 tbsp

Coriander powder -2 tsp

Cumin powder -1tsp

Green chillies-12 no.s

Cilantro -1 bunch


Red chilli powder – 1/2 tsp

Salt as per taste

Ginger -Garlic Paste- 1 tbsp

Lemon juice- 2tbsp

To make a paste  take a blender jar add green chillies, cilantro, mint leaves and blend it into a smooth paste add 1 tbsp Lemon juice  for a smooth paste instead of water

Marinate the chicken with all the ingredients  preferably for overnight or at least 4 hours.

For Preparation :

Onion -1 (medium sized)


Star anise-4

Cardamom -3

Cinnamon -2sticks

Daghad phool – 2tbsp

Cumin &shahijeera-1 tsp

Cashews -10-15


Rice-3 cups soaked for at least 1 hour

Water-5 cups

fried onions(store bought)- 1/4 cup

Salt as per taste

Take a wide pan, add ghee,  once the ghee  is hot add whole  garam masala, cashews, onion  and fry them till they turn brown.

Add chicken to the pan and fry it for 10-15 minutes and close the lid

Once the chicken is half cooked, add water,salt and let the water come to boil.

Add soaked rice to the pan, and give it a stir, add a tbsp of ghee and fried onions and cook it for at least 30-40 minutes covered until the rice and chicken completely cooked.

Add fried onions

Add ghee

Cook it covered until it is completely cooked. After 30-40 minutes, check the rice and chicken. Turn off the flame and rest it for 15 minutes

Serve it hot with onions and lemon wedge


One can add black cardamom, bay leaf if you prefer.

The rice should be very perfect done and not mushy.

For 2 cups of rice, add 3 cups of water for the perfect grainy rice.
