Carrot-Orange Loaf

Ingredients :

 Finely  Carrot grated – 1cup

Orange zest- 1tsp

All -purpose flour – 1 1/2 cup 

 Castor sugar – 1 cup 

Baking soda – 1/2 tsp

Baking powder  -1/2 tsp

Nutmeg powder-1/2 tsp

Cinnamon powder – 1tsp 

Oil -1/2 cup

Egg-1 large

Salt-1/2 tsp 

Method of preparation :

1)Preheat the oven at 350F  and meanwhile prepare the mixture.

2) Whisk oil, egg, sugar. Blend it very well.

3) Add grated carrot and Orange zest to the mixture.

4) Sift the flour, cinnamon, salt, baking soda, baking powder, nutmeg into the mixture and whisk the mixture very well.

5) pour the mixture into a loaf tin with parchment paper and bake for 55 minutes and test it with a toothpick if it comes clean and it’s ready.

6)Once  it is done, place it on the cooling rack and rest it for 5-10 minutes and using knife scrape on sides on pan and turn it around.

7) cut them into slices and enjoy.

Note: The cake is crisp outside and moist inside.

You can use half of whole wheat flour instead of full all purpose flour.
