Chicken pickle ( Telangana/ Andra) version.

Ingredients :

Chicken -1.5 lbs

Oil for frying 

Salt to taste 

Reddy chilli powder -5 tsp 

Lemons -2 big 

Mustard powder- 2 tsp

Cumin powder – 2 tsp
Garam masala powder -2 tsp
Coconut powder- 2 tsp

Garlic cloves mashed- 5no.s

Preparation method step by step instructions :

For Marination :

Chicken (boneless)- 1.5 lb

Salt – 1 tsp

Method :

Cut the chicken into small bite size pieces 

Marinate the chicken with salt and rest it for 6 hours.

Once the chicken  is marinated , to take out the moisture from it beat it with meat tenderizee hammer or press it.

For frying :

Take  enough oil in a pan  to fry the chicken 

 Heat  the oil, add the chicken pieces and fry them until all the moisture is lost,  until light golden color achieved

Keep them aside on a paper towel.

Preparation for the gravy in pickle:
Red chilli powder – 5 tsp or to adjust spice

Salt to taste or 3 tbsp

Lemons -2 big 

Mustard powder-  2 tsp

Cumin powder – 2 tsp

Garam masala powder -2 tsp

Coconut powder- 2 tsp

Garlic cloves mashed- 5no.s
Take a bowl, add Redchilli powder, salt, lemon juice, all masala and powders, garlic cloves, and give it a mix.

For frying the gravy: 

Take oil around 6 tbsp, add the gravy preparation, and fry it for a while until the raw smell is gone.

Add fried  chicken pieces to the gravy and fry for a minute.

Let all the mixture cool and store it in a air-tight glass container.
Note

1)Check  the seasoning and add it later on.

2)Pickle  tastes good  after a day. 

3) Store  it in a glass container, do  not  touch  it with  wet hands, it will spoil your pickle.

4) Do not  leave  any metal  spoon in pickle.

5) It’s good to consume within 15-20 days
